Instructions
- Sanitize all equipment.
- Warm grape juice gently to ~100°F.
- Dissolve 2 lbs of clover honey into the warm juice.
- Top up to 1 gallon with cool water in your fermenter.
- Take OG reading — target ~1.105.
- Pitch EC-1118 at 65-75°F. Apply TONSA protocol.
- Primary ferment 3-4 weeks (EC-1118 is fast).
- Rack to secondary; age 2-4 months for grape and honey to integrate.
- Bottle. Drinks well at 4 months; improves through 12.
