A hydromel is a low-alcohol session mead — light, refreshing, ready to drink in just weeks. Acacia honey keeps the flavor delicate and clean.

Ingredients

Spring water to 1 gallon
1.0 packet Lalvin 71B yeast
Fermaid O nutrient (lighter dosing — 1g/gal x 2 additions)

Instructions

  1. Sanitize all equipment.
  2. Warm 1/2 gallon water to ~100°F and dissolve 1.5 lbs of acacia honey.
  3. Top up to 1 gallon. Take OG (~1.057).
  4. Pitch 71B at 65-75°F. Add nutrient at 24h and 48h only.
  5. Primary ferment 2-3 weeks (faster than full-strength mead).
  6. Rack and cold-crash for 1 week to clear.
  7. Bottle. Ready to drink at 6-8 weeks total. Best served chilled.
  8. Optional: lightly carbonate by priming with 1/2 oz corn sugar before bottling for a sparkling session mead.
