Instructions
- Sanitize all equipment with Star San.
- Warm 1/2 gallon of water to ~100°F (do not boil).
- Dissolve 2.5 lbs of wildflower honey into the warm water.
- Top up to 1 gallon with cool water in your fermenter.
- Take an OG reading — target ~1.095.
- Pitch rehydrated yeast at 65-75°F.
- Follow TONSA protocol: nutrient additions at 24h, 48h, 72h, and 1/3 sugar break (around day 4-5).
- Ferment 4-6 weeks until activity stops and OG drops to ~1.000.
- Rack to secondary, age at least 3 months for clarity and roundness.
- Bottle when crystal clear. Best at 6-12 months.
