A clean, balanced traditional mead built on wildflower honey. Show meads contain only honey, water, yeast, and nutrients — perfect for showcasing the honey itself. Beginner-friendly.

Ingredients

2.5 lbs wildflower honey
Spring or filtered water to 1 gallon total volume
1.0 packet Lalvin 71B yeast
Fermaid O nutrient (TONSA protocol — ~1g/gal per addition x 4)
0.25 tsp DAP (optional, day 1 only)

Instructions

  1. Sanitize all equipment with Star San.
  2. Warm 1/2 gallon of water to ~100°F (do not boil).
  3. Dissolve 2.5 lbs of wildflower honey into the warm water.
  4. Top up to 1 gallon with cool water in your fermenter.
  5. Take an OG reading — target ~1.095.
  6. Pitch rehydrated yeast at 65-75°F.
  7. Follow TONSA protocol: nutrient additions at 24h, 48h, 72h, and 1/3 sugar break (around day 4-5).
  8. Ferment 4-6 weeks until activity stops and OG drops to ~1.000.
  9. Rack to secondary, age at least 3 months for clarity and roundness.
  10. Bottle when crystal clear. Best at 6-12 months.
