A semi-sweet mead enhanced with mixed berries added in secondary. Vibrant color, jammy nose, and bright fruit on the palate.

Ingredients

Instructions
- Sanitize all equipment.
- Warm 1/2 gallon water to ~100°F and dissolve 2.5 lbs honey.
- Top up to 1 gallon, take OG reading (~1.100).
- Pitch yeast at 65-75°F. Apply TONSA protocol.
- Primary ferment 4 weeks until calm.
- Rack to secondary onto thawed mixed berries (frozen and thawed extracts more juice).
- Add pectic enzyme to aid clarity.
- Macerate on fruit 2-3 weeks, tasting weekly.
- Rack off the fruit; let clear; age 3-6 months.
- Bottle. Drinks well at 6 months, peaks at 12.
