A semi-sweet mead enhanced with mixed berries added in secondary. Vibrant color, jammy nose, and bright fruit on the palate.

Ingredients

2.5 lbs wildflower honey
2.0 lbs frozen mixed berries (blueberry, raspberry, blackberry)
Spring or filtered water to 1 gallon
1.0 packet Lalvin 71B yeast
Fermaid O nutrient (TONSA protocol)
0.5 tsp pectic enzyme (added in secondary)

Instructions

  1. Sanitize all equipment.
  2. Warm 1/2 gallon water to ~100°F and dissolve 2.5 lbs honey.
  3. Top up to 1 gallon, take OG reading (~1.100).
  4. Pitch yeast at 65-75°F. Apply TONSA protocol.
  5. Primary ferment 4 weeks until calm.
  6. Rack to secondary onto thawed mixed berries (frozen and thawed extracts more juice).
  7. Add pectic enzyme to aid clarity.
  8. Macerate on fruit 2-3 weeks, tasting weekly.
  9. Rack off the fruit; let clear; age 3-6 months.
  10. Bottle. Drinks well at 6 months, peaks at 12.
